Noble™ a word defined as possessing very high or excellent qualities or properties.  We selected NOBLE™ Merlot as the name to represent our 2017 Merlot. This wine has unique qualities and excellent properties that distinguish this wine. 

Merlot is the third most panted grape worldwide and one of the primary grapes used in Bordeaux wine. Its is the most widely planted grape in the Bordeaux wine regions in France. It is a popular varietal that is  inky, purple colored and makes full body wines high in alcohol. This wine has lush velvety tannin’s and intense, plum, blackberry, strawberry and stone fruit characteristics. 

The vineyard is located in El Dorado County at an elevation of 2073 ft. and was harvested at the peak of ripeness with fully developed  flavors.  The beautiful inky color was achieved by cold soaking for seven days prior to fermentation and then fermenting one the skins for three days after fermentation before pressing.

We wanted a truly incredible representation of the Merlot wine and believe we achieved it.  NOBLE™ Merlot 2017 has wonderful floral fragrances and an explosion of blackberry and plum  on the palate.  The perfectly balanced tannins and medium to longer finish make this the perfect food pairing wine.

We consulted with a top yeast lab to select a  special yeast for fermentation to enhance the flavor profile.  This wine was then aged 38 months in American Oak.

This is a full bodied Merlot that pairs well with sauce dishes and/or fish. The boldness and fruitiness enhance braised beef, a medium rare steak, pork or roasted lamb. Experiment and see how the flavors interact with different spices such as thyme, rosemary and oregano.
